Quick Oregano Spinach side dish....a little different than my cakes.

I really liked this recipe and thought I would make it again for dinner and share it with the folks over at Foodie Friday (http://www.designsbygollum.blogspot.com/). It's low in calories and doesn't take alot of time to prepare. It's also a simple addition to grilled fish and with the lemon wedges for the spinach you can use it for the fish also. Oregano Spinach
Cooking Spray (Pam)
12 ounces baby spinach leaves
1/2 teaspoon dried oregano, crumbled
2 TBL light tub margarine
1/2 medium lemon, cut into 4 wedges

Directions
Lightly spray a large skillet with cooking spray. Cook half the spinach with half the oregano over medium-high heat for 1 1/2 minutes, or until the spinach is just limp, sitrring constantly. Add 1 taplespoon margarine, stirring gently until just melted. Transfer to a serving bowl. Cover to keep warm. Repeat. Serve with the lemon wedges to squeeze over the spinach.

Serves 4; 1/2 cup serving
Calories 40; Total fat 2.5g, Dietary Fiber 2g
