Weigh-In Results

Okay, so I weighed in yesterday for my 1st week and the results are...... 1 pound lost. I am happy that I lost and not gained. I know I have to work harder this week and not let anything get in my way. I didn't exercise all the days like I should've but I'm just starting out and I'm not letting myself get down.

I know this is Mother's Day weekend and I'm going to pace myself and watch what I eat. I do want to share a recipe that the mother's of the world can enjoy. It's a bit high on the calorie chart but I think we can enjoy ourselves for this weekend. I hope you all enjoy it!!! (I did)

Pina Colada Smoothies
8 pineapple chunks, fresh or canned in their own juice, drained
1 medium lime, cute into 8 wedges or slices
3 cups pineapple sherbet
1 1/2 cups fat-free milk
1/4 teaspoon rum extract
1/4 teaspoon cocunut extract

Directions
Alternate the pineapple and lime on 4 skewers. Set aside for garnish.

In a blender, combine the remaining ingredients. Process until smooth, scraping the sides occasionally. Pour into glasses to serve immediately or you can refrigerate for up to 30 minutes in the pitcher. You can also put the pitcher in the freezer for 30 minutes and take out later for a frozen dessert. Garnish each serving with a pineapple-lime skewer.

Serves 4; 1 1/4 cup per serving
Calories 205; Total fat 1.5g; Dietary fiber 0g
