I had tried and posted this recipe earlier this year but decided to make it again for dinner and share it with our friends at Foodie Friday (http://www.designsbygollum.blogspot.com/). This recipe is quick, healthy and especially tasty. Remember when our moms would always tell us to eat our spinach well now I tell my boys the same thing and they love this recipe. I make it along with a nice piece of grilled fish and rice pilaf. The lemon wedges that are with the spinach can be used on the fish as well.

Oregano Spinach
Cooking spray (Pam)
12oz baby spinach leaves
1/2 tsp dried oregano, crumbled
2Tbl light tub margarine
1/2 medium lemon, cut into 4 wedges
Lightly spray a large skillet with cooking spray.
Cook the spinach and the oregano over medium-high heat for 3 1/2 minutes or until the spinach is just limp, stirring constantly.
Add the 2tbl of light tub margarine, stirring gently until just melted.
Transfer to a serving bowl and cover to keep warm.
Serve with the lemon wedges to squeeze over the spinach.
Serves 4; 1/2 cup serving
